Flourless chocolate cake for Mother’s Day

Today at Mother’s Day I got this!  My daughter made it for me, almost completely by herself. Isn’t that fantastic! She knows how much I love chocolate! This is a recipe without flour, it is completely gluten free. Not free of sugar nor calories though, but it is very easy to make and really delicious!

You'll Need...

  • 100 grams of dark chocolate
  • 125 grams of  butter (softened)
  • 125 gram sugar (any type)
  • 4 eggs
  • 200 grams of ground almonds
  • some icing sugar for the decoration


  1. Mix the sugar with the butter
  2. Split the yolks from the whites of the eggs. Keep the whites separate and add the yolks to your mixture
  3. Add the ground almonds to the mixture
  4. Melt the chocolate 'au bain Marie'. (Put the chocolate in a cup and put the cup in boiling water)
  5. Whisk the egg whites to snow.
  6. Add the melted chocolate to the mixture and stir well.
  7. Very gently, mix the egg whites in the mixture.
  8. Line a cake tin (22 cm) with baking paper or grease with butter and dust with flour.
  9. Bake during 30 minutes on 180 ºC.
  10. Prick in the cake, if your pricker comes out clean, the cake is ready.

Icing sugar in heart shapes: 
  • For the decoration my daughter used a little template of a heart. Cut out a heart out of a piece of paper. Now, you can use both the heart as the piece of paper that has the heart cut out of it.  Put them on the cake and use a little sieve to scatter some icing sugar over the cake.  You could also use different sizes of hearts.

Chocolate icing

If you prefer proper icing, you can consider to make chocolate icing for it. The cake below is one I made a few years ago with the same recipe. Making it required a little bit more time and it is quite a bit richer, but it was lovely too!

  • 100 grams of dark chocolate
  • 100 grams of single cream


  1. Put the cream together with chocolate (broken in little pieces) in a little saucepan. Warm up slowly without letting the cream boil.  Stir well until all the chocolate has melted.
  2. Leave this mixture to cool down until the viscosity is perfect for decorating the cake.
  3. Use a big knife to spread the chocolate cream evenly over the cake.
  4. Add your decorations before the chocolate cream has become completely solid so they stick well on the cake.
