Finally a new recipe on the blog! I have been working hard on my food photography skills lately. Practice makes perfect they say, so that is what I have been doing, practice, practice and practice some more. Funnily enough that doesn’t make it easier nor quicker. I can easily spend a good few hours on a photo now. Hence, not much activity on my blog lately.
If you are interested in the results of all my practicing you could have a look at my portfolio. I have started to realise that a portfolio is something that is always work in progress. It is never finished and is always going to get better, that is why I often hesitate to share it, but not today! Do have a look and let me know what you think and of course if I could give you a hand with photos of your own.
Meal planning? Or not!
Enough about the photos, let’s talk about dinner now. Figs are in season right now. Although they usually are not grown locally, I do have a soft spot for them. That is not just because they are so pretty, their flavour is fantastic too. I got a few really pretty ones in the shop the other day.
More often than not I go to the market or the supermarket with no meal plan at all. I simply buy what I find. I buy what is in season, locally grown (or as local as possible) and what looks good. Then around dinner time, I look at what I have got and start to figure out what dinner could be like.
Not so efficient maybe, but good fun, good quality and there is always something new!

Anyway, that is exactly how this tortilla pizza came about. I had bought these beautiful figs that don’t keep very long and I didn’t have a plan for them. So I opened up the fridge and my cupboards and this is what it ended up being: a tortilla pizza with figs, feta, lettuce and pomegranate seeds and it was absolutely delicious.
It is ready in no time and works for breakfast, lunch or dinner really. I hope you and your family will like it too!

Tortilla pizza with figs and feta

- 1 (wholemeal) tortilla
- 1 fig
- 1 small apple
- 1 tbsp pomegranate seeds
- 5 walnuts
- 50 grams of feta
- 2 handful of mild lettuce like spinach, pea shoots or lamb lettuce
- some olive oil to drizzle on top of the pizza
- Preheat the oven to 180 degrees Celsius.
- Get the seeds out of your pomegranate
- Break up the walnuts in smaller pieces
- Break up the feta in little bite size pieces
- Slice the apple in thin slices and drizzle some lemon juice over to prevent them from browning.
- Bake the tortilla in the oven for about 5 minutes until crispy.
- When the tortilla is crispy at all the toppings starting with the lettuce.
- Drizzle a little bit of oil (olive oil, or maybe walnut oil) on top if you like.
